Batch Cooking: Cabbage Rolls, Roasted Carrots, Lamb Breakfast Patties, Chard, and Steak for Salad

It’s the 4th and final week of my 30 day elimination diet – although it’ll actually last a little longer since I’ll be playing around with re-introducing a few items. I kept salad on the menu for lunch, but mixed it up with some buffalo steaks (I’ll cook some more up later in the week if I run out).

So, this week’s menu:

  • Breakfast: Lamb breakfast patties with sautéed chard (plus “supplements”: sauerkraut and Fermented Cod Liver Oil)
  • Lunch: Salad with buffalo steak, avocado, cucumber, grapes, Italian prune plums, and olive oil
  • Dinner: Cabbage rolls (without sauce, cheese, or eggs) and roasted carrots

Now I have food for most of the week – such is the joy of batch cooking :)

Mmmm … buffalo. I pick up a quarter of one on Saturday morning at the Farmers Market. And I get all of the goodies (offal) because as she put it ‘nobody usually wants that sfuff’. I must be weird ;)

Nice! A quarter of a buffalo – how many pounds is that?!

It ends up being about 75 lbs. Half ground and half steaks, roasts, ribs, and stew meat. I requested that they put more of the fat into my ground meat because buffalo can be quite lean.

In contrast, the quarter cow I purchased last year was almost 100 lbs of meat.
