You can tell it’s miserable outside in rainy Vancouver when I’m eating stews every chance I get. Warming me up for lunch: lamb stew – not quite finished yet in the picture above. And the dinner belly warmer will be my favourite curry: coconut chicken, atop cauliflower “rice”. Breakfast will be either eggs or sausage with an avocado half.
Now I have food for most of the week – such is the joy of batch cooking :)

Hi, do you live in Vancouver as in Vancouver, B.C, Canada? I live in Canada too (east coast), but wishing I had some mild weather right about now :)
The coconut chicken dish seems interesting. It says 3 lbs of chicken…what is that in grams? Just thinking about how the packages say the number of grams. And how many servings per recipe? Thanks.
Yep, Vancouver, BC, Canada. The 3lbs should yield about 6-8 servings, depending on serving size – especially if you don’t eat it with rice. 3 lbs = approx. 1.4 kg
