Batch Cooking: French Onion Soup, Scotch Eggs, Roasted Squash, and Curry Apricot Chicken Salad

More fall flavors this week. For dinner, a flavorful French onion soup with a side of Scotch eggs and sweet & savory roasted squash. For lunch, some curry apricot chicken salad on a bed of lettuce. And for breakfast, Scotch eggs (turns out one is more than enough for dinner) or sausage.

Now I have food for most of the week – such is the joy of batch cooking :)
