My elimination diet is now over :) Although other than for the continued lack of dairy, you might not be able to tell. Especially considering I made paleo shepherd’s pie again – for breakfast. Sooo good. And then there’s also the massive batch of beef bone broth (with some chicken feet thrown in for good measure). And ghee.
So I had to keep lunch kind of simple (I already overcommitted on everything else). That’s why I’m eating salad, again. Probably (hopefully) the last week of eating salad for a while. But for dinner this week – the most amazing, delicious, buffalo meatza with figs, elk prosciutto, basil, caramelized onions, pears and walnuts. Definitely the best meatza I’ve ever had, if not the best pizza in general. And as if dinner couldn’t get any yummier, the meatza’s served with a side of zucchini noodles with basil walnut pesto. Pizza and pasta, paleo style. Yeah, baby.
This week’s menu:
- Breakfast: Paleo shepherd’s pie
- Lunch: Salad: green leaf lettuce, chicken, plums, grapes, cucumber, pear, avocado, olive oil
- Dinner: Bison meatza (with figs, elk prosciutto, basil, caramelized onions, pears and walnuts) with a side of zucchini noodles (will be cooked up fresh each day), with basil walnut pesto
Now I have food for most of the week – such is the joy of batch cooking :)
