Yes, it was a few hours of pandemonium :P
But, now I have food ready to go for almost the entire week.
That’s the joy of batch cooking :)
On the menu this week: prime rib with yams and asparagus for dinner, and cream of broccoli soup with chicken for lunch.
The bowl is full of au jus. And if those yams look funky to you, it’s because they are. One was moldy, but the others seemed fine. Apparently they weren’t. I’ve never seen yams turn out bad like that before – yuck.

It’s hard to tell from the picture … are the yams full of white spots?
No, take another look – notice how some of them are brown, not orange? It was odd. All the other yams had seemed fine before being baked. And then once they baked, the majority (80%) of them were partially if not wholly brown. They looked rotted. I’ve never had that happen before…
I see what you’re talking about. From first glance I just thought you had left some of the skin on. That is odd. I’ve baked a boatload of sweet potatoes and yams this past year and haven’t seen that before.
My but the prime rib looks delicious!!! I hope the recipes are coming soon.
Thanks for reminding me to post the prime rib recipe! :) I keep making it, but have yet to post it.
