Batch Cooking: Prime Rib Roast, Au Jus, Carrots, Asparagus, Apple Spice Turkey Breakfast, and Salad with Chicken

I tend to go a little lighter on the cooking in the summertime – especially for lunch, which often ends up being salad + protein. This week was especially easy with the prime rib roast, but there are two vegetable sides (carrots and roasted asparagus). The apple spice turkey breakfast was so good last week, I had to make it again. And the salad will be assembled daily for lunch (lettuce + chicken + avocados + figs + peaches). This menu is for week 2 of my 30 day elimination diet. So, now I have food for most of the week – such is the joy of batch cooking :)
