Another elimination diet friendly recipe, from Epicurious: Braised Beef and Onions. Simple to make, only 5 ingredients including the beef, and pretty impressive results considering how little effort goes into it. Lots of flavour, without using nightshade spices. The dry rub actually had this cool texture to it, quite different from other meat seasonings. Also, the braise is quite interesting in that it doesn’t use any liquid – all the moisture comes from the onions once they cook down.
We used an eye round roast, and would probably decrease the baking time slightly next time around, in hopes of it being a little more moist (could just be the grass-fed/finished meat). Served with sautéed Brussels Sprouts.
