Belated Thanksgiving? Certainly by Canadian standards, and even so by US. I didn’t get to have a proper Canadian Thanksgiving because I was on an elimination diet. Although the Cornish game hens were quite the stand-in act. Tracking down a fresh turkey appears to be a near impossible task unless it’s either Thanksgiving or Christmas, so I picked up an organic one at a US Whole Foods. If turkeys were more commonly available, I would batch cook them more often. They’re pretty easy to do and taste phenomenal. As for lunches, keeping it simple this week – bought some roasted chicken and will have it with some kraut or a simple salad of sorts.
Now I have food for most of the week (this will feed 2 for dinner and one for lunch) – such is the joy of batch cooking :)
