I love me some chicken salad. It’s easy to make, tasty, and makes for a nutritious lunch. To not get bored of chicken salad, I like to mix things up. Here are my favourite chicken salad recipes – I’ll update this post if I come up with any more.
This chicken salad is different enough to really stand out. The chicken, rather than the greens, is drenched in the dressing, and the fresh tarragon lends an unusual, distinctive flavor. The grapes and dried currents add an unexpected twist, helping to differentiate this salad from others. If I want salad for lunch, yet I’m tired of salad for lunch, this is the salad I make.
Using a fatty Greek yogurt as a salad dressing makes this chicken salad extra creamy. Plus, it’s nice to shake things up and use something other than mayo or a vinaigrette. Texturally, the smooth yogurt is a great contrast to the crunchy walnuts, apples, and grapes. Having said that, I’ve made this salad with a paleo mayo before, and it was also very tasty – so feel free to sub if you’re avoiding dairy.
3. Curry Apricot Chicken Salad
I first tried a similar salad at Urban Fare. It was delicious, minus the crappy canola mayonnaise. This recreation uses homemade olive oil mayo and, of course, way more curry :)
This chicken salad variation has a nice lemony undertone with a hint of sage. But the real treat is the pieces of prosciutto buried throughout.

Great recipes.
When make a chicken salad it is usually very simple. I usually add avocado to increase the fat % and use a mix of herbs that is great on salads.
I love avocado! I usually just put it on regular salads, but I should try incorporating it into a chicken salad.
