Ginger Mango Stilton

I’ve cut way down on my cheese consumption since starting paleo/primal – although I no longer regularly snack on cheese, I do still cook with it, as well as occasionally indulge in some as a tasty treat. When I saw this Stilton at Oyama, with a sign saying “tastes like cheesecake” – how could I have possibly resisted? Apparently, “Only cheese produced in the three English counties of Derbyshire, Leicestershire, and Nottinghamshire – and made according to a strict code – may be called “Stilton”. And,  “The mild White Stilton Cheese is a young distant relative of the famous Blue Stilton.” But honestly, the main reason for buying it was my love of cheesecake.

The taste was very unique. It really did taste more like cheesecake than cheese – I felt like I was eating dessert, which is fitting, because it’s classified as a “dessert cheese.” I could barely taste the ginger, but if you have a strong aversion to it, you might want to stay away, as the gingery taste is said to be too strong for some. And the candied mangoes added a nice contrasting sweetness. It’s perfectly described as sweet (but not overly so), tangy and creamy. Its texture is also unexpectedly crumbly. And it’s unlike any cheese I’ve had before.

I’ve had that cheese! But not recently as I’m now Primal and don’t eat much cheese at all.

Yeah, dairy’s kind of a gray area for me. I’ve reduced, but haven’t eliminated. Though I am considering doing an elimination diet soon, to see if dairy has any effect. We’ll see…
