Incredible Baked Lamb Shanks

This is a very flavorful recipe for baked lamb shanks by Jamie Oliver. I agree with Jamie that these lamb shanks would make a very nice main course for a dinner party. Or you know, for a week of batch cooking. These lamb shanks were a real treat. We served them with a side of pan-fried Brussels sprouts with caramelized onions.

Modifications: The recipe is good to go as written. The only minor change were to peel the garlic, and to rub the shanks with the leftover herb butter instead of olive oil. We also used parchment paper tied with string instead of aluminum foil.

Notes: I’d suggest putting the herb butter in the fridge after food processing it so that it’s actually cold. That’ll make it a lot easier to stuff into the meat, otherwise it gets a little messy (as we learned the hard way).
