As I’m nearing the end of the elimination diet, I’m on the lookout for recipes that comply without being boring and without needing to sub out most of the ingredients. This recipe for Olive, Garlic, and Lemon Chicken tasted awesome and didn’t require any substitutions (although I forgot that I had decided to eliminate citrus fruit, oh well..). The flavour was fresh, lemony, and very much Mediterranean. It made for great batch cooking and also tasted good cold (which I wasn’t expecting). It went very well with sautéed Brussels sprouts.
The only modifications were: using a whole chicken instead of just thighs, using store-bought pureed garlic, and seasoning the chicken with salt and pepper prior to browning.
