Recipe: Lemon & Sage Chicken Salad

This chicken salad variation has a nice lemony undertone with a hint of sage. But the real treat is the pieces of prosciutto buried throughout. Enjoy it on a bed of lettuce or on its own. Free of gluten, dairy, grain, and nightshades.

Ingredients:

  • 1 roasted chicken, shredded
  • 2 tsp fresh sage, chopped
  • zest of 1/2 lemon
  • 2-3 celery stalks, chopped
  • 1 apple, chopped
  • 1/4 red onion, minced
  • 2 garlic cloves, minced
  • approx. 100g prosciutto, shredded (can use venison, elk, etc. instead of pork)
  • 1/2 cup walnuts, coarsely chopped (optional)
  • 1/2 cup paleo mayo
  • salt and pepper
  • head of lettuce (optional)

Preparation:

1. Combine everything except mayo in a large bowl.

2. Salt and pepper to taste.

3. Stir in mayo.
