This chicken salad variation has a nice lemony undertone with a hint of sage. But the real treat is the pieces of prosciutto buried throughout. Enjoy it on a bed of lettuce or on its own. Free of gluten, dairy, grain, and nightshades.
Ingredients:
- 1 roasted chicken, shredded
- 2 tsp fresh sage, chopped
- zest of 1/2 lemon
- 2-3 celery stalks, chopped
- 1 apple, chopped
- 1/4 red onion, minced
- 2 garlic cloves, minced
- approx. 100g prosciutto, shredded (can use venison, elk, etc. instead of pork)
- 1/2 cup walnuts, coarsely chopped (optional)
- 1/2 cup paleo mayo
- salt and pepper
- head of lettuce (optional)
Preparation:
1. Combine everything except mayo in a large bowl.
2. Salt and pepper to taste.
3. Stir in mayo.
